Dressed Up Tomato Soup

I like soups in Fall, period. But Tuesday night was an especially “soupy” night. It drizzled off and on all day, then got very dark around 4:30 p.m. In rolled the cumulonimbus and down came the rain.

It was a perfect night for soup!

Here’s what I made, an easy “dress up” recipe that starts with a can.

Ingredients:

1 can tomato soup (I use Campbell’s Healthy Request)
1 can milk (just fill the tomato soup can)
1/2 – 1 tsp. dried basil (or if you’re fortunate enough to have fresh, up it to a couple tablespoons)
1/4 tsp. onion powder
1/4 tsp. garlic powder
cayenne pepper to taste
1 tomato, chopped (or I’ve used some cherry tomatoes or a can of diced)
1 tsp. balsamic vinegar

Put tomatoes in saucepan on medium heat, cooking until tender (doesn’t take long with the canned variety).  Add spices and tomato soup, heat until steaming.  Add milk and heat until bubbling.   Remove from heat and stir in vinegar.  Enjoy!

  1. YUM!!! I want to make this TONIGHT!! (hubby may be on his own…he doesn’t like tomatoes…so strange) 🙂

    And I prefer PB&J (grape jelly only!) with my tomato soup. I’ve maybe had grilled cheese with it, like, a handful of times.
